Stuffed bitter melon in lotus soup
Bitter melon is a wonderful vegetable. It takes some getting used to but simply put, it's one of the best veggies out there. We're talking twice the beta carotene of broccoli, twice the calcium of spinach, twice the potassium of banana, loaded with fiber and vitamins C and B. No wonder it's consider a medicinal plant in Asia! On the other hand you've got lotus root which is a zero fat, high fiber, loaded with vitamins vegetable.
My mom made this whenever I had acne flare ups because it's considered a "cooling" food to bring your body back into equilibrium, flushing out toxins from the liver which normalizes hormone production - the catalyst for over active sebaceous glands resulting in acne. WHEW that was a long sentence. It's also great for major hang overs. I've modified her recipe with meat substitute but honestly, you don't miss it in this dish.

I moved to Shanghai less then a month ago and have yet to cook any meals. A good meal of cheap dumplings and lo mein will run you about a buck fifty USD so its hard to bring myself to labor over a stove, not to mention its very hot here, but this sounds almost good enough to try it out... Cheers!

sure you can find this stuff in michigan! Just depends on where you're shopping! Most obvious, hit up your asian grocery stores!!
